  • 1 cup sweetened coconut flakes
  • 1 cup chopped pecans
  • 3 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line with parchment paper.
  2. In a mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
  3. In another bowl, cream the softened butter until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Mix buttermilk and vanilla extract into the butter mixture. Gradually add dry ingredients until just combined.
  5. Divide the batter evenly between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  6. For the frosting, melt butter in a saucepan over low heat; stir in coconut flakes and pecans until lightly toasted. Let cool slightly before mixing with cream cheese and powdered sugar until smooth.
