  • 2 large onions (preferably Vidalia)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 cup vegetable oil (for frying)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)

Instructions

  1. Slice onions into ½-inch thick rings and soak in buttermilk for at least 30 minutes (optional).
  2. Set up three bowls: one with flour mixed with salt and pepper, one with beaten eggs, and the last with panko breadcrumbs.
  3. Dip each onion ring first in flour, then in egg, and finally coat with breadcrumbs.
  4. Heat oil in a frying pan over medium-high heat until shimmering. Fry onion rings in batches for about 3-4 minutes on each side until golden brown.
  5. Drain on paper towels and season with additional salt while hot.
