  • 1 cup buttermilk
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil for frying

Instructions

  1. Soak catfish fillets in buttermilk for at least 1 hour.
  2. In a bowl, mix cornmeal, flour, paprika, garlic powder, salt, and pepper.
  3. Remove fillets from buttermilk; let excess drip off and coat in the cornmeal mixture.
  4. Heat oil in a deep skillet to 350°F (175°C).
  5. Fry coated fillets in batches for 4-5 minutes per side until golden brown.
