  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and peeling the carrots, then chop them into small pieces. Chop the onion and garlic as well.
  2. In a large pot over medium heat, add olive oil. Once hot, sauté the onions until translucent (about 5 minutes).
