  • 8 oz pasta (rigatoni or spaghetti)
  • 5 oz Boursin cheese (garlic & herb recommended)
  • 2 tbsp extra virgin olive oil
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes (halved)
  • ¼ cup grated Parmesan cheese
  • 3 cloves garlic (minced)
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot, adding a generous pinch of salt. Cook the pasta until al dente (8-10 minutes). Drain and reserve some pasta water.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add fresh spinach and cook until wilted (about 2-3 minutes).
  3. Stir in halved cherry tomatoes and cook until they soften slightly.
  4. Lower the heat, add Boursin cheese and reserved pasta water to the skillet, stirring until creamy.
  5. Toss the cooked pasta into the skillet with the sauce until well coated.
  6. Serve hot, topped with grated Parmesan cheese.
