  • 2 medium acorn squashes
  • 1 lb ground turkey or beef (or 1 cup cooked lentils for vegetarian)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup cooked rice or quinoa
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or feta cheese (optional)
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Cut each acorn squash in half lengthwise and scoop out seeds. Brush the insides with olive oil and sprinkle with salt.
  2. Place squash cut-side down on a parchment-lined baking sheet. Bake for 30-35 minutes until tender.
  3. In a skillet over medium heat, heat remaining olive oil and sauté the diced onion until golden brown (5-7 minutes). Add minced garlic and cook until fragrant.
  4. Stir in the ground meat or lentils and cooked rice/quinoa into the skillet. Season generously with cumin, cinnamon, salt, and pepper; mix well.
  5. If using cheese, fold it into the filling mixture now.
  6. Turn baked squash halves over and fill each half generously with the stuffing. Top with additional cheese if desired.
  7. Return to the oven for another 15-20 minutes until heated through and cheese is melted.
  8. Let cool slightly before serving.
