  • 6 cups fresh apples (a mix of Honeycrisp and Granny Smith)
  • 1/2 cup brown sugar (adjust to taste)
  • 3 cinnamon sticks
  • 5 whole cloves
  • 2 slices peeled ginger
  • 8 cups water

Instructions

  1. Wash, core, and chop the apples into quarters (don’t peel).
  2. In a large pot, add the chopped apples, brown sugar, cinnamon sticks, cloves, ginger slices, and water.
  3. Bring to a boil over medium heat. Reduce heat and simmer uncovered for 1-2 hours until fragrant.
  4. Mash the softened apples with a potato masher to release juices.
  5. Strain the mixture through a fine mesh strainer or cheesecloth into another pot or bowl.
  6. Serve warm with an extra cinnamon stick or chill for later enjoyment.
