  • 2 lbs ripe tomatoes, halved
  • 1 cup fresh basil leaves, chopped
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • ½ cup heavy cream (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Place halved tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 30 minutes until caramelized.
  2. In a large pot over medium heat, add olive oil. Sauté diced onions and minced garlic until translucent (about 5 minutes).
  3. Add roasted tomatoes and their juices to the pot along with vegetable broth. Simmer for 15 minutes.
  4. Remove from heat and let cool slightly before blending until smooth.
  5. Stir in chopped basil and adjust seasoning with salt or pepper as needed.
  6. Serve hot, optionally swirling in heavy cream and garnishing with extra basil.
