Instructions

  1. Sauté the onion, bell pepper, and celery in olive oil over medium heat for about 5 minutes until softened.
  2. Add minced garlic and sliced sausage; cook until sausage is slightly browned, approximately 3 minutes.
  3. Stir in soaked red beans, bay leaves, cayenne pepper, salt, and black pepper.
