  • 1 lb ground turkey
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup bell peppers, chopped (any color)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 cups cooked pasta or rice
  • ½ cup bread crumbs
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, add olive oil. Sauté onions and bell peppers until softened (about 5 minutes).
  3. Increase heat; add ground turkey and cook until browned (7-10 minutes). Break up clumps as it cooks.
  4. Stir in garlic, cumin, paprika, diced tomatoes (with juice), salt, and pepper; simmer for another 5 minutes.
  5. Fold in cooked pasta or rice until combined.
  6. Layer half of the turkey mixture in a greased baking dish; top with half of the shredded cheese. Add remaining turkey mixture and top with more cheese and breadcrumbs.
  7. Bake for 25-30 minutes until bubbly and golden brown.
