  • 2 cups chopped carrots (about 2 medium)
  • 2 cups chopped celery (about 2 stalks)
  • 1 medium yellow onion, chopped
  • 4 cups low-sodium chicken broth
  • 2 cups dumpling mix
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh parsley, chopped
  • Salt & pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop the chicken into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil. Sauté onions, carrots, and celery until softened (5-7 minutes).
  3. Add chicken pieces and cook until golden brown (8-10 minutes).
  4. Pour in the chicken broth and bring to a gentle boil.
  5. Carefully drop spoonfuls of dumpling dough into the simmering broth. Cover and cook until dumplings are fluffy (about 15 minutes).
  6. Finish with salt, pepper, thyme, and parsley before serving.
