  • 4 cups filtered water
  • 1 cup raw honey or maple syrup
  • 2 cinnamon sticks
  • 1-inch piece fresh ginger (optional)

Instructions

  1. Rinse dried elderberries under cool water to remove debris.
  2. In a medium saucepan, bring 1 cup elderberries and 4 cups filtered water to a boil over medium heat, stirring occasionally.
  3. Add cinnamon sticks and optional ginger; reduce heat and simmer for 30 minutes.
  4. Remove from heat, let cool slightly, and strain through a fine mesh sieve into a bowl, pressing down on the berries.
  5. While still warm, stir in honey or maple syrup until fully dissolved.
  6. Pour into sterilized bottles or jars and seal tightly. Store in the refrigerator for up to three weeks.
