  • 200g fresh ramen noodles
  • 4 cups low-sodium chicken broth
  • 2 tbsp low-sodium soy sauce
  • 2 green onions, sliced
  • 2 soft-boiled eggs
  • 1 tsp sesame oil
  • 1 cup bok choy, chopped
  • 1 cup mushrooms, sliced
  • 150g cooked chicken or tofu (optional)

Instructions

  1. Prepare the broth by simmering the chicken broth in a large pot over medium heat. Stir in soy sauce and sesame oil.
  2. Cook the ramen noodles in boiling water according to package instructions until al dente; drain and set aside.
  3. Add chopped bok choy and sliced mushrooms to the simmering broth three minutes before serving.
  4. For soft-boiled eggs, boil eggs for six minutes, then transfer to an ice bath for easy peeling.
  5. Assemble bowls by placing noodles at the bottom, ladling hot broth over them, and topping with green onions and halved eggs. Enjoy!
