  • 4 large poblano peppers
  • 1 lb ground beef or turkey
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place whole poblano peppers on a baking sheet and roast for 20-25 minutes until charred.
  3. In a skillet, sauté onion and garlic over medium heat until translucent. Add ground meat and cook until browned (7-10 minutes).
  4. Stir in cumin and chili powder, mixing well for another 2 minutes.
  5. Peel the charred skin from the roasted peppers, slice them open lengthwise, and stuff each with the meat mixture. Top with shredded cheese.
  6. Bake stuffed peppers for an additional 15-20 minutes until cheese is melted and golden. Serve hot.
