  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp kosher salt
  • ½ tsp freshly cracked black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Season chicken thighs generously with salt and pepper on both sides.
  3. In a bowl, whisk together olive oil, minced garlic, lemon juice, smoked paprika, and cumin. Pour the marinade over the chicken in a resealable bag or shallow dish. Let marinate in the fridge for at least 30 minutes.
